A descendant of Nugget, the high-yielding, high-alpha acid American bittering hop Columbus is one of the “Three Cs” along with Cascade and Centennial. Like the others, it’s citrusy and slightly woody, and with a high amount of total oils. Also good for dry hopping. Possible substitutions include Chinook, Galena, Millennium and Nugget.

Relatively new variety becoming increasingly accepted. Used for bittering mainly, good flavor. Aroma is earthy, spicy, pungent, with some citrus overtones. Not overwhelmingly citrus like Cascade. This variety also goes by the name of “Tomahawk”. Use in IPA’s, Pale Ales and Stouts.
